Ingredients
200G DESICCATED COCONUT 2 TABLESPOON COCONUT OIL
100G FROZEN CHERRIES 1 TEASPOON HONEY 100G FROZEN BLUEBERRIES
2 TABLESPOON CHIA SEEDS 300G DARK CHOCOLATE 2 TABLESPOON COCONUT OIL
1.Put the coconut, coconut oil, cherries, honey into a blender and blend to combine 2.Line a baking tray/pan with baking paper. Add the mixture and flatten with a spoon, set aside. 3.To make the jam filling, heat the blueberries, chia into a saucepan over medium heat. Simmer while stirring for 5 minutes or until the mixture is syrup like. 4.Spread jam on the top of the coconut mixture then place in the freezer for an hour 5.Melt the chocolate with the coconut oil over a low heat. Once melted pour into a bowl and set aside 6.Remove the coconut mixture from the freezer and cut with a hot knife into bite side pieces. 7.Dip your coconut pieces into the chocolate with a fork and place on baking paper in the fridge to set. Enjoy!
