Beetroot & Puy Lentil Burgers

FULL OF IRON,ANTIOXIDANTS AND PROTEIN



Ingredients

2x medium beetroots 1 large carrot 110 cooked puy lentils (you can buy organic pre-cooked puy lentils) 1 red onion 2 organic eggs, lightly beaten 100 organic buckwheat flour 1 tsp coconut oil (to cook with)





  1. Trim, peel and grate the beetroot, onion, and carrot. Put all the ingredients except the oil into a large bowl and mix thoroughly.

  2. Shape the mixture into four burgers and gently fry in the coconut oil until crispy on both sides and heated through.
